Abstract

Sebagai lembaga pendidikan vokasi di bidang perhotelan dan kuliner, SMK Widiatmika memiliki potensi besar mendukung industri pariwisata, namun terkendala keterbatasan fasilitas pelatihan barista dan integrasi konsep tourismpreneurship berbasis green tourism. Menanggapi kebutuhan dunia usaha akan tenaga kerja terampil, tim pengabdian masyarakat menawarkan solusi melalui pengembangan Coffee Laboratory (COLAB) sebuah inovasi sarana pembelajaran barista yang terintegrasi dengan kewirausahaan hijau. Kegiatan melibatkan 70 peserta (guru dan siswa), dimulai dengan pengenalan green tourism dan penyusunan Business Model Canvas (BMC), dilanjutkan pelatihan teknik barista, proses kopi dari hulu ke hilir, serta praktik daur ulang limbah kopi menjadi coffee briquette. Sebagai dukungan berkelanjutan, diserahkan satu set peralatan barista lengkap untuk mendukung Barista Teaching Factory (TEFA). Hasilnya, terjadi peningkatan kompetensi barista, pemahaman green tourism, dan kemampuan merancang model bisnis berkelanjutan. Program ini diharapkan memperkuat daya saing lulusan di dunia kerja dan wirausaha, sekaligus menjadi model pembelajaran vokasi yang memadukan keterampilan praktis, kewirausahaan, dan kelestarian lingkungan.
